Cannoli Pie

We Love cannoli, but do not have the patience or the equipment for making and frying the whole deal. So  we tried to get the lovely flavor of the traditional Italian  cannoli in an easy to assemble pie . After several tries with an array of ingredients, we hit the best combination of flavor and texture!
So if you are in the mood for cannoli and there is not an Italian bakery in sight, or if you want to surprise your guests with the perfect end to an Italian menu ,  this easy cannoli pie will fit the bill . In case of nut allergies, please  omit the pistachios.

 

Ingredients:

1 pie shell
3 cups ricotta , drained if too liquid
1 cup sugar
juice of one orange
rind of one orange
1 Tbsp orange liquer
1 egg
Dark chocolate shavings ( for decoration)
1/4 cup chopped pistacchios

 Heat oven to 325 degrees. Meanwhile, in a food processor, mix the ricotta cheese with the sugar and the orange juice, the rind and the liqueur.  Mix smooth ( about 2 minutes). Add the egg and continue to mix till uniform.

Pour mixture into pie shell and bake for 55 to 60 minutes (depending on your oven) till the top has a shiny sheen, and the consistency of  cooked creme brule ( it will wiggle slightly when shaken) . Let cool  to room temperature  or at least for 4 hours before serving, Slice the pie and top with chocolate shavings and pistachios ( if using) .ENJOY!

 

Dulce De Leche Pie

 It’s almost holiday season and it’s the time when we start planning who will cook what and when. Ready to try something completely new and delicious? Try this pie! With only 4 ingredients and a pie crust you’ll be done baking in no time.

Call it a cheesecake if you like , but this is rich and scrumptious pie carries the unique flavor of Dulce de Leche . Your guests will be hooked at first bite. It’s sweet and decadent and a great alternative to plain cheesecake, pumpkin or sweet potato pie.

It can be made ahead and refrigerated up to 2 days. It takes less than 5 minutes to put together and an hour to bake! 
Serve with a dollop of whipped cream for a lovely dessert.

Ingredients
1 8 oz package of cream cheese, softened
1 13 oz can (2/3 cup) of Dulce de Leche
1 tsp vanilla extract
3 eggs beaten
1 pie crust

 

Heat oven to 325 degrees. Meanwhile, in a food processor, beat the cream cheese with the Dulce de Leche and the vanilla till smooth ( about 2 minutes). Add the eggs and continue to mix till uniform.

Banana Nut Bread

A Healthy Banana nut bread with low cholesterol? is that possible? Absolutely! The trick is to use a ripe banana and cream it as if it were butter. The result is a  flavorful loaf that will please any crowd. If you have leftovers, they make the most amazing toast.

Please note: the recipe can also be used for Banana bread, omit the nuts or replace with same amount of chocolate chips or raisins.

Ingredients: for one large (8 x 4) loaf

2 cups all wheat flour
1 cup of sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup chopped nuts
2 ripe bananas, mashed
1/3 cup canola oil
2 eggs, beaten
2 Tbls of milk

Preheat the oven to 350 degrees. Combine all dry ingredients with the nuts, mix well. In a separate bowl add the bananas to the eggs and milk, then add oil, mix till even. Gently combine both mixtures, till barely moist, careful to not over mix. Pour into a greased 8×4 loaf pan and bake for an hour or till a toothpick inserted near the center comes out clean. Cool over a wire rack before slicing. Enjoy!

Cheesecake With Fruit Toppings

We love this !!! Cheesecake and fruit in one glorious slice. The idea came about when one of our soy- allergic and corn allergic  friends  told us how much they missed cheesecake. As you know, most commercially sold cakes have soy, corn ( in the High fructose corn syrup or HFCS for short ) and a myriad of other preservatives that will upset a gentle tummy.

So we set to build a cake with no soy and no corn . It’s so simple to make and tastes so delicious we no longer purchase them!  We are also proud to  reveal it has none of the weird aftertastes associated with some cakes. Please note: we used store-bought jam, and graham crackers with no soy, but read the labels carefully many have fructose as an ingredient instead of sugar.

Ingredients: for a 9-inch round cake

2 cups graham cracker crumbs
1/2 cup butter, melted
3 8-oz packages of cream cheese, softened
1 cup of sugar
1 tsp vanilla extract
2 eggs, beaten
1/3 cup of milk

Preheat the oven to 375 degrees. Make a crust by combining the graham cracker crumbs with the melted butter. Press onto the bottom of a spring form pan. Chill in refrigerator.
In a food processor, mix the cheese with the sugar, the vanilla and mix till fluffy. Pulse in the eggs and the milk till combined. Pour mixture into crust and bake for 45 to 50 minutes or until the center jiggles softly when shaken.
Top with sliced fruit of your choice : peaches, kiwi, strawberries , blueberries and brush top with a mix of 1 Tbsp jam to 1 Tbsp of water to give luster. Enjoy!

Maple Pumpkin Pie

We love pumpkins! Jack o Lanterns are up and burning and pumpkin patches will soon do their “two for the price of one” offers. Just in time to prepare an all time favorite!  Nothing greets the season better that the sweet aroma of our pumpkin pie flavored with sweet maple syrup. 

Its easy to make! either use 2 cups of home cooked pumpkin, or use a can for a shortcut

 

Ingredients: for one pie

1 16 oz can of pumpkin or 2 cups of mashed cooked pumpkin
1 8 oz package of cream cheese, softened
1 tsp ground ginger
1 tsp ground cinnamon
3 eggs beaten
1/2 cup maple syrup
1 pie crust ( Single if you want a classic pie or double if you want a lattice top)

Heat oven to 375 degrees. Poke bottom crust with a fork, place in oven and bake for 15 minutes.  Meanwhile, in a food processor, beat the cream cheese with the spices and the maple syrup, add pumpkin and the eggs and continue to mix till uniform.

Pour mixture into semi-baked bottom pie crust. If you like, make a lattice top as in the picture by cutting the other pie crust with a knife to an even number of strips and interweaving them. Bush top with milk and bake for 30 to 35 minutes.

Let cool before serving, enjoy with spiced wine.
