Fig Vinaigrette Chicken With Stilton And Mixed Greens

Bored of common salads? Try this Scrumptious lunch or a refreshing summer supper. Tangy Stilton combines with the sweetness of fig Enjoy with a chilled glass of Vinho Verde. Best of all: it’s low-carb!
Ingredients: (2 servings)
8 chicken tenderloins or 2 chicken breasts
4 cups mixed greens
1/4 cup crumbled White Stilton
2 Tbls olive oil
2 Tbls fig balsamic vinegar
1/4 cup vinaigrette of your choice for the greens
salt & fresh ground pepper to taste
In a sauté pan cook the chicken in the olive oil and the vinegar, set aside to slightly cool.
Meanwhile, mix the greens with the vinaigrette and assemble on a serving dish. Cut the chicken into bite size pieces and top with the stilton. Add salt & pepper to taste and serve. Enjoy with a chilled glass of Vinho Verde
