Fresh Hummus

 Hummus is a very old and traditional dish. Its main ingredient is crushed chickpeas, AKA garbanzo beans or ceci bean. There are many variations , some call for olive oil, some for butter, some include tahini ( sesame seeds) .  Our version is nut free and gets its wonderful bright taste from freshly cooked chickpeas.

Try serving with fresh vegetables or as a no-cholesterol replacement for cheese spread.

 

 

Ingredients:

1 and 1/2 cups cooked and drained Garbanzo beans ( AKA chickpeas)

1/3 cup water

2 cloves of garlic minced

juice of 1/2 lemon

2 Tbls apple cider vinegar

1 Tbsp olive oil

1/2 teaspoon cumin

salt to taste

 

Place beans and garlic cloves in a blender, process till well mixed, add water little by little till it looks like a puree, Careful: adding too much water will turn it into a smoothie! Add the rest of the ingredients and mix again. If the consistency is too stiff, add a tsp of water at at time. Check for salt ( if needed) and serve in a bowl.

  2. There’s only ONE way to make hummus and that’s with TAHINI.

    Hummus must contain chickpeas, tahini and lemon juice, otherwise it’s not hummus.

    Our recipe is nut-free, so we had to omit the wonderful sesami part.
