Roma Tomatoes With Mozzarella And Olive Tapenade

A great low carb appetizer or starter. Delicious and rich in nutrients, these bites add variety to bread laden buffets. Prepared ahead to enjoy more of you party time. Can also be enjoyed slightly broiled or grilled . Try them on crusty bread for a bruschetta type quick treat!
Ingredients for the tapenade:
1 cup ripe black and green pitted olives minced
4 tablespoons extra virgin olive oil
2 cloves of fresh roasted (or sautéed) garlic
1 small pimento chopped
salt & pepper to taste
Other ingredients:
4 or 5 Roma tomatoes 1/4 inch thick
1/2 pound fresh mozzarella sliced
Mix the tapenade ingredients in a bowl, salt & pepper to taste.
Place slices of mozzarella on the tomatoes, top with a teaspoon of the tapenade. Drizzle with more olive oil if desired.
