Cannoli Pie

We Love cannoli, but do not have the patience or the equipment for making and frying the whole deal. So  we tried to get the lovely flavor of the traditional Italian  cannoli in an easy to assemble pie . After several tries with an array of ingredients, we hit the best combination of flavor and texture!
So if you are in the mood for cannoli and there is not an Italian bakery in sight, or if you want to surprise your guests with the perfect end to an Italian menu ,  this easy cannoli pie will fit the bill . In case of nut allergies, please  omit the pistachios.

1 cup sugar
juice of one orange
rind of one orange
1 Tbsp orange liquer

Rich Flavor Turkey Basting

Tired of butter and herbs? Want to jazz up your holiday turkey with some richly flavored basting?
Try some of our favorites! Basting sauces can be made in double quantities to serve as a side sauce together with the traditional cranberry and  gravy. For best flavor results, basting should be done in the last 45 of cooking time.

Honey-Mustard  ( makes 1 cup):

1/2 cup dijon mustard
1/4 cup clover honey ( room temperature)
1/4 cup olive oil
salt and pepper to taste

In a medium bowl, mix  the olive oil with the honey with a whisk  till it changes to a paler color and slightly thicker texture. Add salt and pepper if using and then incorporate the mustard. Stir till it completely mixed.

Spicy Chipotle basting sauce ( makes 1 cup):

1/2 cup tomato paste
2 chipotle peppers chopped
3 Tbls olive oil
3 tbls sugar
salt and pepper to taste

Place all ingredients in food processor and mix till smooth ( about 2 minutes). The mixture should now have consistency of ketchup : just enough viscosity to stick to the back of a spoon and to a turkey breast 🙂

Can’t find Chipotle peppers? Use  2 tbls of cranberry sauce mixed with 1/2 tsp hot sauce and 1/2 tsp of liquid smoke

Easiest Ever Homemade Pizza

Tired of paying a fortune for delivery pizza? Tired of greasy messes that taste like cardboard box in which they were delivered? Try  making a pizza with real flavor! It’s so much easier than what you think!

And Because you are choosing the ingredients  from dough to toppings, it will be a much healthier dish, with a lot better flavor, a no weird aftertaste.  If you are trying to incorporate for fiber and good protein in your family’s diet ( without them noticing)  try a combination of all-purpose and whole wheat flour.

Best of all, you may add as many or as few toppings as you like, or invent your new favorite. Use Part-skim mozzarella for a figure-friendly and low cholesterol version. Try chopping ham, salami, pepperoni, green bell peppers or what ever your family likes!

Ingredients: (for 1 1/2 inch thick, 14 inch round pizza)

For the dough:
3 to 3 1/2 cups all-purpose flour
1 cup warm water (baby bottle temperature)
1 Tbls active dry yeast (1 small pack)
1 tsp salt
2 Tbls canola oil

1 cup tomato sauce
2 cups shredded mozzarella
1 clove garlic, minced
toppings of your choice: ripe olives, chopped onions, pepperoni slices, mushrooms

In a food processor, combine 2 cups of flour with undisolved yeast, and salt. Process for 10 seconds. Add the oil, continue to process adding the water, little by little through feed tube till a ball forms. Pay close attention to the consistency since all the water may not be needed. Continue processing 2 minutes to kneed the dough. Remove from processor and let rest in a covered bowl at room temperature for 30 minutes. By this time, the dough should be slightly puffy .

Sprinkle the pan with cornmeal, place dough on top. Punch dough down and shape to fit desired pan.Place the desired toppings on the pizza and bake in a 450 degree oven till cheese melts ( about 20 to 30 minutes). Baking time will depend on the thickness of the crust and selected toppings. Slice into eights and serve immediately. Enjoy!
