California Fresh Salsa

What to spice it up without adding mega-calories? This salsa will definitely do it! If you never made salsa, don’t worry :it’s quick and easy and has very few ingredients. Take your time to make your own salsa it is really worth it, The flavors exude to compliment the best of fire-roasted chicken, steak or mahi-mahi

This Recipe was given to us by “MasterChef RoD” the definite king  of spicy chiles.  Thank you oh great master of spice for showing us the right way to spice!

Ingredients:( for one cup of salsa)
2 tomatoes, peeled
1 jalapeno with seeds
1 green onion white and green parts
4 or 5 stalks cilantro
1 or 2 cloves fresh garlic ( the fresher the better)
1 pinch sea salt
1 Tbsp lime juice

Chop all ingredients into 1/4 inch bits. Mix in a large bowl and let cool in refrigerator for about 20 minutes. Serve at once, since it is not recommended to save. Those who like it hot, add two Thai-Sri Lanka peppers per tomato. Serve with salt free blue corn chips or as a compliment to fire roasted meats. Enjoy!

Turkey Lasagna


What to do with all that leftover turkey? Because we cannot live on Sandwiches alone, we searched to develop great recipes to incorporate leftover turkey. A simple all-time family favorite is lasagna. All it takes is some lasagna noodles, 4 cups of simple tomato sauce and some cheese. It takes 50 minutes from start to finish and is definitely a crowd pleaser . Enjoy!


Ingredients: for 8 portions

2 boxes of lasagna noodles
2 Tbsp of olive oil
2 cups leftover turkey, chicken or mix, chopped
4 cups simple tomato sauce
2 cups ricotta
salt pepper to taste
1 tsp oregano 
1 tsp basil
grated cheese to taste


Preheat oven to 320 degrees. Mix ricotta with the chopped turkey in a large bowl, add the basil and oregano, and salt pepper to taste. Cook noodles in abundant salted water for 10 minutes or till al dente. Do not overcook or they will fall apart. In a roasting pan, coat bottom with the olive oil and place a bottom layer of noodles, make sure they are arranged so that the whole bottom is covered with no gaps, overlap noodles if needed.

Place a layer of ricotta turkey mix ( about 1/2 of the mix), then place another layer of noodles. Add another layer of ricotta mix, and finally top with remaining noodles.  Pour sauce on top, and place in the oven to bake for 35 minutes.  Take out of the oven and sprinkle with grated cheese. Let rest for 10 minutes before serving. . This lasagna can be assembled ahead of time and remain in the “ready to bake” stage in the refrigerator for 2 days or in the freezer for 2 weeks. ENJOY!

Rolled Mozzarella

Want to try a Tapas or appetizer hat is really special? Well make you own cheese!

It’s easy and takes less time than what you think .  It took us less that 40 minutes to go from milk to cheese and it was fun! We Rolled our mozzarella with prosciutto, but you can try it with ham, turkey or use spinach leaves with some oil salt and pepper to make it vegetarian.

If you have a loved one who is allergic to cows milk try making it with goat or sheep milk. If you have access to fresh milk even better! 

Ingredients: (for 1 rolled mozzarella)

1 measure whey ( can be bought by mail order or in specialty and health food stores)
1 Qt milk
1/4 pound sliced prosciutto

Follow instructions on the package for the cheese, form ball of cheese, stretch it out to about 1/2 inch thickness and place the prosciutto slices on top. Roll to a cylinder , wrap with plastic cover and let cool in the refrigerator for 2 hours. Slice and serve with blue cheese , crostini, and wine.

Salsa Verde AKA Tomatillo Salsa



This is a fresh and tart salsa; it’s great for dipping corn chips.

Try it as a topping for grilled salmon or chicken breast



1 pound tomatillos, or green tomatoes chopped
1/2 cup chopped onions
2 jalapenos, seeded and coarsely chopped
1 cup cilantro leaves chopped
juice of 1 lime
salt to taste

Combine all ingredients except the jalapeno, mix enough jalapeno pepper to suite your taste. Once achieved the desired mix, you may further chop using the pulse button of the food processor. Be sure ingredients are chopped but not pureed! Use immediately or store covered in the refrigerator for up to four days.

*Tomatillo Tip:

Tomatillos are sticky under their husks, be sure to wash and dry then before using!
