Grape Tomato Italian Bruschetta

Bruschetta are delicious starters, they appeal to most palates and are so easy to prepare. A key ingredient is a tasty tomato, but where to get a tomato that is tasty in the middle or winter? It’s not that there are dozens of farmers markets with luscious fruits on display. Market tomatoes are , well, forcefully ripened, mushy and bland in flavor. The solution a miniature gem that grows year-round in hothouses :the grape tomato! If you never had one they are sweet, have the taste of a a full size summer tomato and are simply delightful to serve! Up until now they were reserved to prepare salads, but when duty calls this mighty fruit can live up to the most demanding fresh tomato recipes, like this bruschetta. Enjoy!

2 1/2 cups grape tomatoes, cut in half
1/4 cup black pitted olives, sliced
1/3 cup green olives, sliced
1 small clove garlic, peeled and minced
1/3 sweet onion, finely minced
1 tablespoon virgin olive oil
1/2 tablespoon balsamic vinegar
salt and freshly ground pepper to taste

Combine tomatoes, onion and garlic in bowl and mix gently. Let sit for a minute , then add the olives, the oil, vinegar and salt pepper to taste. Let stand at room temperature about 30 minutes. Serve over grilled sliced Italian or French bread sliced 3/4 inches thick. If you are on  a gluten-free diet, serve on rice crackers instead.

Pan Seared Chicken Napolitano

Want rich, comfort food that will not make you feel guilty?  Thy this quick and easy an seared dish. It takes 30 minutes to make and only uses one pan. But don’t let that fool you:  the rich, meaty tomatoes and fresh garlic flavor the chicken as in Napoli and pack a quite satisfying punch.

Serve over a bed  whole wheat pasta for a wholesome treat. Serve over roasted potatoes or brown rice for a gluten- free version of this meal. Enjoy!

Ingredients: (for 2)

2 boneless, skinless chicken breasts
1 large paste tomato, or 2 Roma tomatoes coarsely chopped
1 large garlic clove, minced
3 Tbls olive oil
1 Tbls red chile oil
2 Tbls balsamic vinegar

In a large sauté pan, heat the oils and the vinegar. Add the chicken breasts and sear on each side till almost cooked (about 2 minutes per side). Turn the heat off and add the garlic, stir and let cook for 30 seconds add the tomatoes. Stir to coat the chicken well and serve immediately.

This dish serves well atop of Fettuccini Alfredo.

*Cooking Tip: You can use frozen chicken tenderloins for this recipe.

No Potato Salad


Craving for potato salad but on a low carbohydrate diet? Try this delicious adaptation. It has all the flavor of real thing without the carbs. The rich texture of the green beans combined with tangy dressing  satisfy the worst of cravings!
Replace regular mayo for canola oil mayo to make it soy-free.

Ingredients: (8 servings)

1 lb green beans chopped into half inch pieces
1 medium red onion, chopped
1 orange (or red) bell pepper, chopped
1/3 cup olive oil
1/2 cup canola oil mayonnaise
salt & pepper to taste

Place water in a large pot, salt the water and bring to a rolling boil. Add the green beans and let cook for 8-10 minutes or till they are cooked but still crisp.
Place the raw onion in a large mixing bowl, drain the green beans and add to the onions, mixing well. The heat of the beans will cook the onions slightly. Add the bell pepper, salt and pepper to taste. Add the olive oil and stir well. Incorporate the mayo. You may add some mustard or vinegar if desired. Serve warm or set the mixture aside till it cools. It can be made ahead and will keep 2 days in the fridge.

Honey-Mustard Roasted Turkey Breast

Make a whole turkey for a large family ( or if you are a turkey-leftover junky. Try a turkey breast if your loved ones only like white meat, or  a boneless turkey breast for a small gathering , or if more than one meat is served . The best part: Carving  is a breeze!

Ingredients: for 6 servings

1 boneless breast of turkey, defrosted
1/4 cup Dijon mustard
1/4 balsamic vinegar
3 Tbls honey
1/4 stick of butter, molten ( use 4TBSP olive oil if you need milk free)

Preheat oven to 325 degrees. Mix the butter with the other ingredients till well blended. Place turkey on baking tray and spoon on the mixture till its about 1/8 and 1/4 on an inch thick. Place in the oven and cook for 30 minutes. Cover with foil and continue to cook for approximately 1 and 1/2 hour, basting frequently. The turkey will be done when a thermometer inserted in the middle reads 170 degrees. Remove from oven and let stand for 20 minutes. Meanwhile prepare the pan gravy with the drippings Carefully remove the netting and slice. Enjoy with trimmings such as Cranberry sauce, mashed potatoes and cornbread stuffing.

Tuscan Bruschetta


This is a fresh, colorful and very flavorful bruschetta. Excellent starter, and always a hit at buffet  parties! We use a little Gorgonzola* cheese to add zing,  Pecorino Romano also works well. Enjoy with a good Pinot Grigio

*Please note: do not use Gorgonzola, blue cheese or any veined cheese if there is someone with penicillin allergies.


1 loaf Italian bread (or any crusty bread)
1/4 cup balsamic vinegar
3 medium sized red ripe tomatoes, diced
3 medium sized yellow ripe tomatoes, diced
1/4 cup Gorgonzola cheese, crumbled
1 garlic clove, minced
1/2 cup extra virgin olive oil
3 springs fresh basil, ripped
extra olive oil to drizzle

Preheat oven to 350 degrees. Meanwhile, in a bowl, mix the tomatoes with rest of the ingredients and let rest for 5 to 10 minutes.

Slice the bread loaf diagonally into 1 inch slices, place in a baking dish, drizzle some olive oil and toast in the oven for 5 minutes or till slightly toasted. Remove from oven and carefully spoon the tomato mixture on top of each slice, return to the oven just to heat the toppings and serve immediately.
